Gluten Free Funfetti Cake This gluten free funfetti cake is perfect for birthday celebrations. The gluten free and dairy free white cake is light and airy and filled with colorful sprinkles. Finish it off with dairy free frosting and extra sprinkles for the ultimate funfetti experience! PALEO ALMOND FLOUR PANCAKES Grain-free, gluten-free refined sugar-free almond flour pancakes. This easy and delicious paleo pancake recipe is sure to please the whole family! These almond flour pancakes have been a staple in my household since circa 2011. They’re light, fluffy, moist, and (do I daresay) indistinguishable from pancakes made with all-purpose flour. You’ll just have to taste them to believe it! I have included a recipe video here to show you the process of making these grain-free almond flour pancakes from start to finish. Mediterranean Orzo Salad Mediterranean Orzo Salad is a simple vegetarian side dish recipe that’s packed with fresh and zesty flavors. Guess what? We’re hittin’ the 50s later this week – whee! I know I sound like a broken record, and have inaccurately predicted this about 16 times in the past 2 months, but this time I think the warmer (ish) weather is here to stay. That said, when Ben and I got married on April 5, 2008 there was a freak snow storm 3 days beforehand, so I can’t rule out another one, but luckily we were back up in the 60s by the time we exchanged vows.  Good story. EASY CHEESY BACON CHICKEN – LOW CARB KETO GLUTEN FREE Bacon smells like Heaven. I love the smell of it wafting through the house. I’ve made this Cheesy Bacon Chicken twice for company in the last month to rave reviews so I thought I should share the love. With only 5 ingredients and a 5-minute preparation, you will feel the bacon love in no time! Cheesy Bacon Chicken - with only 5 ingredients and a 5-minute preparation, you will feel the bacon love in no time! Ingredients 5-6 chicken breasts , cut in half width wise (about 2.5-3 lbs.) 2 tbsp seasoning rub (I use my smoked paprika rub, but you can use a seasoning salt or bbq rub - basically any rub with salt, garlic powder, onion powder, paprika - not an herb rub) 1/2 pound bacon , cut strips in half 4 oz shredded cheddar sugar free barbecue use , optional, to serve Instructions Preheat oven to 400. Valentines pancakes Recipe Ingredients : 1 cup all purpose flour-  2 tbsp granulated sugar-  1 ½ tsp baking powder-  ¼ tsp kosher salt- 1 cup of whole milk- 1 egg- ½ tsp vanilla extract-  2 tbsp butter, melted- 5-6 medium-sized strawberries,  sliced- sprinkles of your choice Instructions : In a small bowl, mix together milk, egg, and vanilla extract. In a separate bowl, mix together flour, sugar, baking powder, and salt. Make a well in the flour mixture and pour in the milk mixture, mixing well and then adding in the melted butter and stirring until combined. Heat a sauté pan over medium-low heat and butter or spray it with cooking spray. Once hot, scoop ½ cup of batter into the pan. Immediately lay 3-4 strawberry slices on each pancake, gently pressing each one in. Sprinkle with sprinkles and let it cook for about 2 mins or until golden brown, flip to the other side and cook for another 1-2 mins. CABBAGE ROLL SOUP THIS CABBAGE ROLL SOUP HAS ALL THE SAME FLAVORS AS CLASSIC BAKED CABBAGE ROLLS, BUT WITH WAY LESS WORK! CLEAN EATING CHICKEN CHILI This Clean Eating Chicken Chili is absolutely delicious! I’ve made it twice since I originally posted, and it’s only been three weeks. This hearty and healthy chili recipe is lightened up with ground chicken and is a yummy clean eating recipe PLUS it’s 21 day fix approved. INGREDIENTS: 1 tbsp olive oil 1 lb ground chicken 1 onion, chopped 1 red bell pepper, diced 1 cup chicken broth 1 can black beans 1/2 cup frozen corn 1 can fire roasted tomatoes (14oz) 1 can tomato paste (roughly 1/4 cup) 1/4 cup applesauce 1 tbsp ground chili powder 1 tsp cumin 1 tsp oregano 1 tsp thyme 1 tsp garlic 1/2 tsp cayenne DIRECTIONS: Heat a large pot over medium heat and add the olive oil. Cauliflower is a great replacement for chicken in this recipe because it’s juicy, hearty, and tender. The double batter guarantees a perfect crunch! Becoming vegan has opened my eyes up to the many ways of preparing Southern staples without using animals. In every case, the vegan recipe is as delicious and fulfilling as the non-vegan alternative. So much of what we like about a traditional recipe is the seasoning, and technique. VEGETABLE TERIYAKI STIR-FRY (VEGAN, OIL-FREE, AND GLUTEN-FREE) This Vegetable Teriyaki Stir-Fry is one of my most popular recipes, and it’s been with me for a while! The veggies in this stir-fry are vibrant and cooked until just a little tender but still fresh and with some crunch. And the sauce… it’s brimming with lots of fresh garlic and ginger and has that salty/sweet teriyaki appeal. Add some tofu and cashews and serve over noodles or rice and you have one outstanding, pleasing meal! My General Tso’s Chicken and Better than Takeout Beef & Broccoli were amazing so I knew that Mongolian Beef would be a big hit in our house. Ingredients 1.5 pounds flank steak 3/4 cup brown sugar 3/4 cup soy sauce 2 cloves garlic 3/4 cup water 2 tbs corn starch 2 tbs sesame oil 1 cup shredded Carrots Instructions Placepot saute. VANILLA ORANGE PULL APART BREAD This bread is a sticky-sweet delight. Filled with orange and vanilla flavoring, it's definitely a sweet treat for a special brunch or dessert.  Ingredients (Serves: 6-8) 1 lb loaf, frozen white bread dough ( ex Rhodes), thawed 2 TBSP melted butter zest of 1 orange 2 TBSP white sugar FOR GLAZE 1/2 cup ( 1 stick) 1 TBSP vanilla 1 TBSP orange juice 1/2 cup brown sugar Instructions On a floured surface, roll bread dough until flat. Approx 8-10 inches long. If needed, cut corners to make a long, flat, rectangle. In a bowl, combine sugar and orange zest. Set aside. Brush melted butter on top of flatten bread dough. Then, sprinkle orange zest/sugar mixture on top of melted butter. Cut dough ( I used a pizza cutter) into smaller rectangles. You should get approx 12-15 smaller rectangles. RIDICULOUS CHOCOLATE CAKE This is the most RIDICULOUS Chocolate Cake I’ve ever made…seriously delicious, super easy and crazy moist (sorry). There is so much to love about this cake! You all know I am not opposed to using a cake mix from time to time. I, personally, look at cake mixes like any other ingredient. I don’t use them all the time, as I find making a cake from scratch is just as easy, but there are times when there is no substitute. Today is an example of that. The base for this stupid-good cake is a chocolate cake mix. It’s not negotiable. There is a time and place for “from scratch” cakes, I totally agree, but not today. I mean, have you ever tried my Earthquake Cake? Now that we are all on the same cake mix page, let’s talk a little more about this slice of perfection.
